Bran muffins

I did diet center successfully in the 80's. There was a recipe for bran muffins. Does anyone have one they could post?

You may try this recipe:

2 large overripe bananas, mashed
1/2 cup applesauce, unsweetened
2 large eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup wheat bran
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt


Preheat oven to 350F. Lightly grease the bottom of a muffin pan or use muffin liners.
Mix all the wet ingredients in a medium mixing bowl.
Whisk all the dry ingredients together in a separate larger bowl.
Stir the wet ingredients into the dry ingredients until combined.
Pour mix into prepared muffin pan, making 12 muffins. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Let them cool a few minutes before removing from the pan.

Yield: 12 muffins. 1 muffin = 1 starch, 1/2 fruit, 1/2 fat, 1 additional

I have this one from a 1980's book
3 T water
3T non fat powdered milk
1 T no calorie sweetener
3/4 cored apple
1/4 t vanilla extract
4 drops almond extract (I like almond so I add a bit more)
pinch of cinnamon (i like cinnamon so i add a bit more)
pinch of nutmeg
4-6 T unprocessed bran (I use oat bran)

Place all ingredients except bran in blender. blend until apples is chunky. pour into bowl and add bran. divide batter among 4 cupcake holders and bake at 350 F for 35 minutes

I forgot about this recipe I must ask if I'm allowed it on my DietFast program.
