Healthy, Low Fat Apple Bran Muffin

1 c. plain non fat yogurt
1 c. chopped apple (1 med)
1/2 c. applesauce
2 egg whites or 1/4 c. cholesterol free egg product
1 c. oat bran
1 c. wheat flour
3 tsp. baking powder
3/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 tsp. splenda (only if you like them sweet)

Heat oven to 400 degrees. Spray 12 muffin cups with non stick cooking spray or line with paper baking cups. Mix yogurt, apple, applesauce and egg whites in large bowl until blended. Stir in remaining ingredients just until flour is moistened. Fill muffin cups 7/8 full. Bake for 20 to 24 minutes or until golden brown. Immediately removed from pan. Makes 12 muffins about 80 cal. or 1 bread. Yummy

Good question? I only know that it helped me lose 76 lbs in the early 90's. I posted a request for the old diet center recipe and no one responded. Not even DC. My suggestion is to ask your counselor. If you have a DC approved recipe, please post it. However, I refuse to pay $7.00 for 3 muffins the size of a prune at my center

This sounds delish. I am doing the program online cuz there're no centers near me. If anyone has suggestions or recipes, please let me know.
